1 cup gluten free oats
1/2 cup almond butter
1/4 cup coconut syrup or agave syrup
1 tbs. melted coconut oil
1 tbs. chia seeds
2 tbs. flax seed meal
2 tbs. cacao nibs
1 tbsp pumpkin seeds
pinch of salt
1/4 tsp. ground cinnamon
- In a large bowl, mix together all of the ingredients until well combined. Cover and refrigerate the mixture for about 30 minutes.
- Using your hands, roll the mixture into balls.
- Roll the balls through the desiccated coconut, coating them
- Place the bites into an airtight container and store in the refrigerator for about 1 week.
