Recipe: Almond Energy Balls

  • 1 cup gluten free oats

  • 1/2 cup almond butter

  • 1/4 cup coconut syrup or agave syrup

  • 1 tbs. melted coconut oil

  • 1 tbs. chia seeds

  • 2 tbs. flax seed meal

  • 2 tbs. cacao nibs

  • 1 tbsp pumpkin seeds

  • pinch of salt

  • 1/4 tsp. ground cinnamon

  • desiccated coconut


  1. In a large bowl, mix together all of the ingredients until well combined. Cover and refrigerate the mixture for about 30 minutes.
  2. Using your hands, roll the mixture into balls.
  3. Roll the balls through the desiccated coconut, coating them
  4. Place the bites into an airtight container and store in the refrigerator for about 1 week.
